Family Birthday







Chet's Birthday was on Friday. We celebrated at his school with a cookie cake. Then that night we had our family birthday. For dinner Chet choose Thai stuffed omelets, rice, and pineapple. For desert he wanted Thai custard. After dinner Chet opened his presents. He had a great day! His favorite present he got was his webkin, Pandy.
Thai Coconut Custard
1 1/2 cups coconut milk
6 eggs, beaten
3/4 cup palm sugar (I use brown sugar)
1/2 teaspoon of salt
Beat everything together. Cook, stirring, in a medium pot until it resembles soft scrambled eggs. Pour into a 9x9 casserole dish. Bake at 350F for 30 minutes, then brown under a broiler.
This should easily serve 4 adults, and can be doubled.
